  2. Take 2 Smoked Cod Loins

Steps to make Smoked Cod Pies:
  1. Heat a pan with a matching lid over a medium heat.
  2. Add the Roughly chop up the Prosciutto Crudo. Once the pan is hot, add it and cook until it becomes crispy. Once it is cooked, remove from the pan and set aside for later.
  3. Add the butter. Cook until melted and then add the flour. Mix well until it forms a sandy texture.
  4. Pour in the milk and bring to a gentle simmer.
  5. Crush the garlic, skin on then add it to the pan along with the spinach, mushrooms and bay leaves. Add the Cod and cover, reducing the heat to low. Poach for around 30mins
  6. Meanwhile pre-heat and oven to 180degreesC, Finely chop the chives and cut the pastry to fit the top of an oven proof dish (this is your pie top)
  7. Once the cod is ready, remove each loin from the pan and place into an oven proof dish and break it up, then scatter over the prosciutto crudo. Add the chives to the poaching liquid and mix well.This is your sauce for the pie. Pour the sauce over the top of the fish, removing the garlic cloves.
  8. Add the pastry lid on top and pierce the top to allow for steam to release. Place in an oven for 30-35mins or until the pastry is cooked.
