Steps to make Coffee Mocha Cake:
Beat the eggs, powder sugar, butter or oil,along with the essence, using a hand blender, till light and fluffy. Mix 1/2 tsp coffee with milk, and pour it in the mixture. Mix together.
Now in a sieve add the flour,baking powder, baking soda, rest of the coffee powder, and chocolate powder and mix in the butter mixture. See that no lumps r there.
Mix all the ingredients either with a spatula or a hand blender, adding small amounts of milk in it, till it becomes smooth and into a flowing consistency.
Grease a 2 pound cake tin, and put a parchment paper underneath. Now pour the mixture in it.
Preheat an OTG machine for 180°c, for 15 minutes, before putting in the cake tin. Bake for 35/40 minutes, or till done. (This depends upon your machine).Check with a toothpick. If it comes out clean,then the cake is done.
Cool on a wire rack. Then turn the cake upside down and cool again for sometime.When cool,cut and discard the top portion of the cake. Now cut the cake into 2/3 layers, for icing.
In a chilled bowl take some whipped cream, and coffee powder and beat till it becomes stiff and frothy. Add sugar syrup in each of the cake layer,so that it stays nice and soft.
Take a cake base, and put on a turntable. Place one layer of the cake and cover with the whipped cream. Continue in this manner, till all the layers r covered with the cream. Now cover the sides of the cake with a spatula, and keep it in the fridge for 15 minutes.
After 15 minutes, take out the cake, and using warm water, and a fresh spatula smooth the cake,till it comes into a good shape.
Lastly, garnish the cake with your choice of chocolate decorations and a few golden balls. Keep it in the fridge for sometime to set. Serve with Chocolate ice-cream, or as it is made. It should have a sweet bitter taste, and should melt in ur mouth.
