  4. Combine the flour, eggs, salt and pepper by preferred method: Hand, or Kitchen Aid mixer.
  5. Wrap in seran wrap and place on the counter for 30 mins to an hour. (Let the ingredients get to know each other, it tastes better.)
  6. Flour cutting board liberally, and cut dough into four equal pieces.
  7. Roll each one out thin enough to fit into your pasta machine. If using Kitchen-Aid pasta attachment, start at # 1 and roll each one through twice on that setting (you might have to cut the sheet in half as it gets longer.) Then continue this process all the way to # 7, moving up 1 number at a time. Then attach your Fettuccini attachment and carefully roll your sheet through. Voila! You now have pasta! Note- add flour if it sticks at any point while rolling. More flour won't hurt!
  8. If doing by hand, roll out as thin as possible, then roll-up each sheet like a fruit roll-up and slice to preferred thickness of noodle. Example: Fettuccini like I did, or thicker like Pappardelle.
  9. When cooking fresh pasta only takes 2-3 mins. To cook. Please salt the water liberally, and do not add oil to your water. The photo below is a dish I made with a simple Buffalo butter and garlic with red pepper flakes. Topped with fresh basil :)
