To get started with this recipe, we have to prepare a few ingredients. You can have fenugreek pudding(vendhaya kali) using 6 ingredients and 4 steps. Here is how you can achieve that.

The ingredients needed to make Fenugreek Pudding(Vendhaya Kali):
  1. Prepare 300 gm Parboiled Rice
  2. Take 50 gm Urad dal
  3. Make ready 25 gm (mild flavor) or 50g(strong flavor) Fenugreek seed
  4. Make ready Gingelly oil-as needed
  5. Make ready small quantity Rock Salt
  6. Get Jaggery-as per taste

Basically, people make this fenugreek seeds curry recipe for lunch, but you can have this for dinner as well. Vendhaya kanji or thengai paal kanji, poondu kanji is a porridge made with rice, fenugreek seeds, moong dal, garlic and coconut milk. I guess it is called with various names. But we call it vendhaya kanji.

Instructions to make Fenugreek Pudding(Vendhaya Kali):
  1. Soak fenugreek seed,urad dal and parboiled rice for 2 hrs.
  2. And then grind the soaked rice,urad dal and fenugreek seed together in a wet grinder meanwhile add required water in regular intervals. Then add required rock salt and mix well.The batter should become a creamy texture.
  3. After grinding,put it in a kadai and stir gently.Cook first 5 mins in high flame and the next 15-20 mins in medium high flame.Keep stirring with no lumps.To check whether it is cooked or not,just wet our hands and touch the cooked mix if it doesn't stick to our hands,it is cooked.If it sticks then cook for few more minutes.
  4. Finally transfer kali to a serving plate.Dig a well in the center and add jaggery to that.Pour required gingelly oil over jaggery and mix well.Finally have a healthy and tasty kali.Serve warm!!!

I guess it is called with various names. But we call it vendhaya kanji. We make this for breakfast, my mom makes this version, while my MIL makes without garlic and. Vendhaya kali is also called as menthulu sankati in Telugu. My mom makes it very often during summer and it is one of my favorite dish.
