  1. Remove top and tail from courgette, then using a wide peeler, peel wide strips the length of the courgette.
  2. Lay out the strips, overlapping the ends and edges.
  3. Cut the cheese slices in half and lay along the vegetable strips.
  4. Roll up as tight as you can and place in an oven tin, sprayed with oil to help prevent sticking.

Remove and sprinkle grated cheddar cheese over.
