  1. Take 1 cod fillet (per person)
  2. Take 3 tbsp extra virgin olive oil

  5. Prepare 1 pinch salt

  3. Preheat a non-stick frying pan, with the 2 tablespoons of olive oil.
  4. Skin face down first lower the fish into the pan.
  5. Fry for about 5-8 minutes.
  6. Gently turn the fish onto the other side.
  7. Fry for about 2-3 minutes on high.
  8. Remove some of the oil from the pan if there's too much oil.
  9. Turn it over back to its skin and cooking for a further 5-8 minutes or until skin has become crispy.
  10. Let it rest a few minutes before serving.
