  1. Prepare 150 g boiled green grams

  2. Add the carrots and the courgette into pot, stir while heating for a minute then add water and stir to mix.
  3. Bring the mixture to boil then add the green grams. Stir to mix. Add more water incase the soup is too thick. Add salt to taste. Cover. Continue heating until the soup thickness is to your liking.
  4. Take off heat.
  5. Serve warm or hot with rice or chapati.

For the courgettes, place the courgette ribbons into a bowl, mix with the oil and season well with salt and freshly ground black pepper. Heat a griddle pan until smoking. Add the courgette ribbons in batches and griddle for one minute on each side, or until brown griddle marks form on both sides. When marrow, courgettes and carrots are plentiful in the summer and autumn, what better way of getting all their goodness than a warming vegetable Courgettes continue to be plentiful and are an amazingly versatile vegetable. You can put them in most stews and add to lasagne and pasta dishes.
