  3. Whisk flour into grease. Now time to break a culinary rule! BURN THE ROUX! Whisk constantly. You want it to be dark brown but not black.
  4. Over medium low heat whisk milk in a little at a time until gravy consistency is achieved.
  5. Add sausage. Add pepper. Salt to taste. This step is very important. Salt-taste-salt-taste.
  6. Serve over biscuits. Enjoy!
