The couscous is usually steamed in a "Couscousiere" several time until it's is light and fluffy, not gummy or gritty. Bring turkey stock to a rolling boil, add in couscous and cover tightly.

  1. Add spices, onions, scallions and seasoning to minced chicken. Cook for 10 minutes
  2. Add couscous couscous
  3. Add carrots, cabbage and seasoning
  4. Add chicken stock on a very low heat. Use foil to cover and cook for 30 minutes
  5. Add butter and green pepper.
  6. Cook for another 5 minutes

Growing up my mom will rarely make Jollof couscous, I think she made it on New Year or birthdays. We will eat Jollof rice and Jollof spaghetti all year long but comes special occasion, my mom will make Yassa, pizza or Jollof couscous. Couscous is a Middle Eastern dish made from small steamed balls of crushed wheat flour.
