  4. Next add the baby spinach and stir until the spinach has wilted. Next add the 2 other tbls butter and the cup of parmesan grated cheese stir in and serve.

Stir in the parsley and half the parmesan. Scatter the spinach over the risotto. Remove from the heat and stir in the lemon zest and Parmesan.
