  6. Brush tartlet cases with egg white, this creates a seal to protect the pastry from becoming wet from the filling and ensures a crispier pastry case.
  7. Filling: In a large bowl mix together the filling ingredients. Beat together the remaining eggs and add to the bowl. Once combined carefully pure the filling into the tartlet cases. Grate a little extra cheese on top.
  8. Bake for 20-25 mins. Until golden and puffed up. Allow to cool then chill in fridge until ready to serve.
