  1. Pre heat an oven to 200 degrees
  2. In a bowl, mix the eggs, cheese, cream and salt until completely mixed
  3. Add mushroom and onion and mix in
  4. In an oven proof bowl, line with spray oil, or butter then put the pastry in the bowl and make sure there's no air bubbles. Fold in the mixture and put in oven for 30-40 minutes
  5. Remove from oven if the centre is sturdy and not wet. Let it rest for a couple of minutes 10 to 20 so it's nice and firm when you cut it.

Drain water from spinach in a sieve and press spinach to dry well. Add spinach to pan with mushrooms and onion. Spinach, mushrooms, feta, and Swiss cheeses fill this moist veggie quiche with flavor. Gently combine spinach, mushrooms, onion, and feta cheese in a separate bowl. Spread spinach-mushroom mixture in the prepared pie dish; top with half the Swiss cheese.
