  1. Get 6 spring onions, sliced
  2. Take 100 grams pre cooked quinoa
  3. Get 1 courgette, grated
  4. Make ready 1 green chilli finely chopped
  5. Make ready 300 grams prawns, chopped up
  6. Make ready 75 grams plain flour
  7. Get 1 tsp hot smoked paprika
  8. Make ready 1 tsp fish sauce
  9. Prepare 1/2 tsp turmeric
  10. Take 1 egg, whisked
  11. Take 1-2 tbs oil
  12. Get to taste Salt and pepper

Instructions to make Quinoa and Prawn Fritters:
  1. Put all of the ingredients into a large bowl, combine until all merged together
  2. Heat a large pan with oil, I’ve used coconut oil. Take out 2 small tablespoons of the mixture make it into a tight ball in your hands. Then add it to the pan! Squash it down so they are flat! Now here’s the tempting part! Don’t try and turn them over too soon !
  3. You need to wait for them to be crisp on the underside otherwise they will break up! A good 3 minutes depending on the heat of the pan! Now turn over!
  4. Make sure both sides are done and them lift them out and let them drain and kitchen paper to let the fat drain off!
  5. Enjoy I served mine with bought sweet chilli sauce! Of course home made chilli sauce is better !
